Gokou is the quintessential Uji cultivar for high-end gyokuro, known for its distinctive fruity aromatics and exceptionally smooth character. The leaves are shaded under tana canopy for 20 to 30 days before harvest, then hand-picked to select only the most tender shoots.
Growing this labor-intensive shaded tea takes years of dedication, and the traditional preparation honors that effort: more leaf, cooler water, less volume, steeped slowly and sipped in small quantities. That said, this tea also steeps beautifully with more standard sencha-like parameters.
